Dehydrators improving food security in remote NT communities

Thanks to the generous support of Aboriginal Investment NT, we are excited to be setting up food dehydrators in 8 remote communities in the NT.

The dehydrators will be used as part of EON’s lessons and workshops on the varied ways to use fresh garden produce, including drying and preserving for longer term use.  The first test run was a huge success with tomatoes and chillies dried, bottled in oil with a range of fresh herbs, and shared around community. Some of the dried tomatoes were pulverised to make a delicious tomato powder that can be stored and added to a range of dishes.

Drying and preserving excess fresh garden produce can contribute to improving food security. We will be encouraging the schools and community members to make good use of the food dehydrators whenever they can.
